Background & Rationale
Bakery and Patisserie, a Corporate Training Program was organised at Lovely Professional University for staff members of Lovely Bake Studio, Jalandhar. Mr. Sugata Mukherjee, Assistant Professor and Mr. Ajay Kumar Sharma,Instructor, Lovely Professional University were the key facilitators.
The program focused on major skills ofculinary arts. Through practical training the participants were enabled to use latest skills of baking. The resource persons also detailed about pastry making skills. Importance of maintaining hygiene in production units was one of the major topics of discussion.The schedule carried a multi pronged approach that included inputs, group discussions, Video tutorials and Demonstrations.
The program focused on:
- Types, specifications, compositions, ingredients
- Formulations, processing, equipment, packaging, storage
- Quality testing: flour selection, properties and specifications, product quality characteristics, defects, causes and corrective measures,
- Bakery and confectionary industry, raw materials and quality parameters,
- Dough development, methods of dough mixing, cereal making.
- Pastry and Cake Making
The program received active participation ofstaff members from Lovely Bake Studio, Jalandhar. The participants were appreciative of the gesture shown by the University in terms of choice of Subject Matter Experts, appropriate learning environment, venue setting, infrastructure, study tours and content delivery. They were also impressed by the subject expertise of the resource persons. The participants observed that the program was outcome oriented and gave them new insights on the topic.
